I think its something that happens to Buffy fans with time you start loving Giles more and more by the day. I think it starts in Season 2's "The Dark Age" when you find out how untweed Giles was, it gets steam in Season 3's "Band Candy" when the Ripper persona shows its awesome self, and then culminates into full on "Giles is hot" love in season 4's "Where the Wild Things Are" when Ripper all earring-ed mid-life crisis-ed out pulls out the guitar and "croons" the Who's "Behind Blue Eyes" at the Espresso Pump much to Xander's horror and our delight. He oozes sexy and every subsequent time we hear him sing from "The Yoko Factor" to "Restless" to "Once More With Feeling" (who's "Standing in the Way" may very well be my favorite number from the musical) the sexy grows. Comparable to the awesomeness of Anthony Head's talent are the reactions of Xander, Willow, Anya, and Tara who are in utter shock to see this side of Giles. Willow is our surrogate saying " Now I remember why I used to have such a crush on him...oh come on he is kind of sexy." To which a disturbed Xander responds "I'm fighting total mental breakdown here, Will. No more fueling the fire."
